Some of the numbers you mention probably could not be recreated because they were never preserved in any way, and it's been decades since the original choreography was used in any production. I don't think there is any record of the original Music Man choreography. It's clear that all of it or almost all of it was reworked for the film, and that includes "Marian the Librarian," and some degree of invention would be required, not to mention an expensive set for "Marian the Librarian" to be put onstage. There was no upper level in the library set for the original production, but since the only source we probably have for the choreography is the movie, the movie set would need to be recreated more or less.

I think it's unlikely that anything from Carnival! except "Yes, My Heart" could be included as I don't think there is any video of anything else (except "Her Face"), and "Yes, My Heart" isn't the kind of number you'd want to include.

The "Quadrille" may be the only thing from Can-Can that exists.

A show could certainly be put together that used the work of multiple choreographers, like American Dance Machine used to do, but I think even a third of an evening might be tough for a lot of the others (de Mille being an exception as she made sure that some of her work got preserved, as did Hanya Holm, who was much involved in Labanotation). I'm not sure that an evening of multiple choreographers would be any more viable for an open-ended commercial run than American Dance Machine was.
